Low Carb chicken cordon Bleu casserole

6 cups shredded chicken -cooked

5 slices smoked deli ham diced

5 slices baby Swiss cheese

8oz cream cheese

1 cup shredded Monterey Jack cheese

4-5 tbsp butter melted

1-2 tbsp Dijon mustard

1-tsp lemon juice

1/2 tsp Garlic powder

1-tsp pink salt

1/2 tsp black pepper


Topping -

2 cups pork rinds crushed

4-5 tbsp melted butter

Preheat oven to 350 degrees

In a medium mixing bowl combine cream cheese, Dijon , butter , lemon juice & seasoning with hand mixer till smooth


In a 9X13 baking dish

Layer shredded chicken with diced ham


Next layer Cheese mixture over the top of the chicken & ham


Layer Swiss cheese over cheese mixture


Top with shredded cheese


Top with crushed pork rinds


Drizzle with remaining melted butter


Bake 30-40 minutes until golden brown
