EASY CROCKPOT WHITE CHICKEN CHILI RECIPE

Ingredients

  • 1 lb boneless, skinless chicken breasts

  • 2 can (15 oz ) white beans, drained and rinsed

  • 1 can (15 oz ) black beans, drained and rinsed

  • 1 can sweet corn

  • 1 can (10 oz) diced tomatoes with green chilies

  • 4 cups chicken broth

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • One packet white chicken chili seasoning

  • Half a packet ranch seasoning

  • 4 oz cream cheese, softened

  • 1/2 cup heavy cream

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)


INSTRUCTIONS

  • Place chicken breasts in the crockpot and add the white beans, green chilies, chicken broth, onion, garlic, and all the seasonings.

  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked.

  • Remove the chicken breasts, shred them using two forks, and return them to the crockpot.

  • Stir in the cream cheese and heavy cream until the cream cheese is melted and the chili is creamy.

  • Serve hot, garnished with fresh cilantro and a squeeze of lime juice.
